BLACKBERRY BREAD
1 pound blackberries
1/2 cup boiling water
1 teaspoon vanilla extract
2 cups all purpose flour
3/4 cup sugar
3/4 cup walnuts, chopped
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1 large egg, beaten
4 tablespoons unsalted butter, melted
Preheat oven to 350. Grease a 9 x 5 inch loaf pan or spray with nonstick cooking spray.
Put the blackberries in a bowl and add the boiling water and vanilla. Let stand at room
temperature until cool.
In a bowl, stir together the flour, sugar, walnuts, baking powder, baking soda, salt, cinnamon, and
nutmeg. Make a well in the center and add the egg, melted butter, and blackberry mixture with it's
liquid. Stir just until evenly moistened.
Spoon the batter into the prepared pan.
Bake until the top is browned and firm and the loaf begins to pull away from the sides of the pan,
55-60 minutes. A toothpick inserted into the center of the loaf should come out clean. Transfer
the pan to a wire rack and let cool for 10 minutes. Unmold the loaf onto the rack and let cool
completely. Wrap the loaf tightly in plastic wrap and store at room temperature. Cut into thick
slices and serve.
