| Recipes BLACKBERRY SMOOTHIE 1 1/4 cup vanilla soy milk 1 container yogurt 1 cup blackberries mix in blender until smooth BLACKBERRY CAKE 3 cups self-rising flour 1 C. unsalted butter or margarine 2 C. sugar 3 eggs 1 tsp. cinnamon 1/2 tsp nutmeg 1 1/2 Cups blackberries 1. Preheat oven to 350 degrees. Grease and flour a 10x4-inch tube pan. 2. Cream butter and sugar in a mixing bowl. Beat in eggs. 3. Add flour and mix until well combined. Stir in cinnamon and nutmeg. Fold in blackberries. Spoon batter into pan. Bake for 1 hour or until cake separates from pan and a toothpick inserted in center comes out clean. 4. Cool on a wire rack. BLACKBERRY PIE 1 1/2 cups fresh blackberries 1 1/4 cups sugar, divided 1/2 (15oz) package refrigerated piecrust 3 Tbsp. cornstarch 1 1/4 cups water 1/2 tsp. vanilla extract 1 (3oz) package raspberry gelatin 4 drops blue food coloring Sweetened whipped cream (optional) 1. Gently toss berries and 1/4 cup sugar in a large bowl; cover and chill 8 hours. DRAIN. 2. Fit piecrust into a 9-inch pieplate, fold edges under and crimp. Prick bottom and sides of piecrust with a fork. 3. Bake at 450 for 7 to 9 minutes or until lightly browned. 4. Stir together cornstarch and remaining 1 cup sugar in a small saucepan; slowly whisk in 1 1/4 cups water and vanilla. Cook over medium heat, whisking constantly, 7 to 8 minutes or until mixture thickens. 5. Stir together raspberry gelatin and blue liquid food coloring in a small bowl; whisk into warm cornstarch mixture. 6. Spoon blackberries into piecrust. Pour glaze evenly over berries, pressing down gently with spoon to be sure all berries are coated. 7. Chill 2 1/2 hours. Serve with whipped cream, if desired. # 1 CUP BLACKBERRIES equals approximately 1/2 cup puree. # STORE FROZEN BERRIES in their unopened or tightly resealed packages in your freezer. If berries are to be served alone, thaw until they are pliable and serve partially frozen. Add sugar to taste - it brings out both the flavor and the luscious juices. # WHOLE FROZEN BERRIES DESTINED FOR YOUR BAKED GOODS should be used frozen. Gently fold into pies, cakes and muffins just prior to use. # PROMPTLY RETURN UNUSED FROZEN BERRIES TO THE FREEZER to prevent them from thawing and re-freezing together. # WHEN STRAINING PUREE TO REMOVE SEEDS, a food sieve with an extra fine screensize works best. If your food sieve has a larger screen size, try inserting a double layer of cheesecloth. |
